docs: expand Z1T-0 model card from official Z1T publication

Expands the model card from official sources only: extropic.ai/writing/z1t, sparse-transformers repo, and released config.json plus load_model.py. Adds architecture, training, scaling, modeled energy/latency with caveats, usage, limitations, and citation. Code license Apache 2.0 per upstream repo. Weight license marked Apache 2.0 pending maintainer confirmation. No weights changed.
